Our buckwheat noodles (it is called, “Soba” in Japanese), which is made with flour and buckwheat powder, are both produced in Japan.
Soba’s proportion is 2 % of flour to 10% of buckwheat flour.
Broth is homemade by Sotoni manufacturing method, using domestic bonito, kelp, soy sauce, red sake, and mirin. (sweet sake) Our specialties are stock and broth.
